  • 3 Mission Plain Pita

  • 300g Pork Belly

  • 1 Scallion, sliced

  • 10g Garlic, peeled and crushed

  • ½ Onion, sliced

  • 5 Ginger slices

  • 3 Bay Leaves

  • 30 Sichuan Peppers

  • 2 Anises

  • 1 Chinese Cinnamon

  • 30ml Light Soy Sauce

  • 10ml Dark Soy Sauce

  • Crystal Sugar, for seasoning

  • Salt, for seasoning

  • Coriander, for seasoning

  • Step 1

    Wash the pork belly and rinse off after blanching.

  • Step 2

    Wash and chop the coriander, wash and cut the scallions into slices, crush the garlic, cut the onion into slices, put the spices (bay leaves, Sichuan pepper, anise, Chinese cinnamon) into the tea bag.

  • Step 3

    Put pork belly, scallions, garlic, onion, ginger and spices bag into a pot, add light soy sauce, dark soy sauce, crystal sugar, salt and water, bring to boil on high heat, then turn to low heat and cook for 1-2 hours (soak overnight in advance for better flavouring).

  • Step 4

    Chop the cooked pork belly and mix with chopped coriander.

  • Step 5

    Slice through the preheated Mission Plain Pita, fill with the chopped pork and serve.
